The LACTOLERANCE fondue recipe
🧀 Ingredients for 4 people
For fondue :
- 400 g lactose-free cheese (melting mixture such as Emmental, Comté, etc.)
- 20 cl dry white wine
- 1 garlic clove
- 1 teaspoon cornflour
- Pepper, nutmeg
For accompaniments :
- 200 g charcuterie (cured ham, Bündnerfleisch, coppa, etc.)
- Lactose-free bread (baguette or cereal bread)
- Crunchy vegetables (mushrooms, cauliflower, carrots)
- Steamed potatoes
👩🍳 Preparing a lactose-free fondue
1. Prepare the fondue pot
Rub the inside of the fondue pot with the halved garlic clove to flavour the fondue.
2. Melt the cheese
Heat the white wine over a medium heat. Gradually add the chopped cheese, stirring constantly.
3. Thicken and season
Dissolve the cornflour in a little cold white wine and stir into the mixture. Add pepper and a pinch of nutmeg.
4. Serve with cold meats and side dishes
Serve piping hot and dip bread, potatoes and vegetables in it, while savouring the cold meats for an even more gourmet touch.
