Cooking recipe: lactose-free pizza

Present in many industrial dishes and in many traditional recipes, lactose is also hidden in the star of Italian dishes: pizza. Fresh cream, cold meats and some of the cheeses found on the ingredient list of the most popular pizzas contain a more or less significant amount of lactose.

How do you make a tasty lactose-free pizza?

Step 1 - Ingredients :

For the pizza dough

  • 350 g flour of your choice (T45, T55, gluten-free, etc.)
  • 1 tablespoon cornstarch
  • 2 pinches of salt
  • 1 sachet baker's yeast
  • 25 cl warm water
  • 3 tbsp olive oil

For the garnish

  • 250 g tomato pulp
  • 100 g button mushrooms
  • 2 peppers
  • 1 onion
  • 2 slices of white ham
  • Parmesan* and/or grated Emmental* cheese
  • black olives
  • Aromatic herbs of your choice (basil, thyme, rosemary, etc.)

* Parmesan and Emmental contain less than one gram of lactose per 100g of finished product. These cheeses can therefore be eaten in moderation as part of a lactose-free diet, except in cases of alactasia or severe intolerance.

Stage 2 - preparation :

For the pizza dough 🥟

In a bowl, mix the flour, cornflour and salt with a spatula, then make a well in the middle. Mix the yeast and ⅕ of your water in another bowl or salad bowl. Pour the mixture into the centre of the well and mix gently with your spatula, gradually adding the remaining warm water and olive oil until you have a smooth dough.

Line a baking tray with baking paper, then pour in your lactose-free pizza dough, spreading it out with a spatula. Cover with a clean tea towel and leave to rest and rise for 2 hours at room temperature.

For the trim 🍅

Thinly slice your peppers, mushrooms and onion, then fry them over a medium heat in an oiled frying pan. Once the vegetables are lightly browned, add the tomato pulp and season with your herbs, salt and pepper. Leave to simmer over a low heat for around 20 minutes.

Then place your vegetables, ham, cheese and black olives on your lactose-free pizza dough.

Step 3 - Baking your lactose-free pizza :

Preheat your oven to 200°C (gas mark 6/7). Bake your lactose-free pizza for 20 minutes at the same temperature, checking halfway through cooking.

Serve straight from the oven and enjoy your pizza with a green salad dressed to taste. 🤌
