Easy recipe for Thai chicken with cashew nuts, lactose-free
Ingredients (serves 4) :
- 500g chicken breast, cut into pieces
- 2 tablespoons coconut oil
- 3 cloves garlic, chopped
- 1 medium onion, thinly sliced
- 1 red pepper, diced
- 1 green pepper, diced
- 1 carrot, sliced
- 1/2 cup cashew nuts
- 2 tablespoons gluten-free soy sauce
- 2 tablespoons fish sauce (nam pla)
- 1 tablespoon coconut or cane sugar
- 1 tablespoon rice vinegar
- 1 teaspoon red curry paste (adjust to your preferred spiciness)
- Fresh basil to garnish
- Cooked rice to accompany
Instructions :
- Heat the coconut oil in a frying pan or wok over a medium heat.
- Add the chopped garlic and chopped onion. Fry for about 2 minutes, until lightly browned and fragrant.
- Add the chicken pieces to the pan and sauté until cooked through, about 5-7 minutes.
- Add the diced peppers and carrots, and the cashew nuts. Sauté for around 3-4 minutes, until the vegetables are tender but still crunchy.
- In a small bowl, mix the soy sauce, fish sauce, sugar, rice vinegar and red curry paste.
- Pour the sauce mixture into the pan and stir well to coat all the ingredients.
- Simmer for a few minutes until the sauce thickens slightly and coats the chicken and vegetables.
- Serve hot over cooked rice and garnish with fresh basil leaves.
