What could be more delicious than a duck breast? Here it is accompanied by endives to balance this delicious dish.
Ingredients
For 4 people:
- 4 duck fillets
- 1 spoonful of watercress
- 8 endives
- 1 tbsp. sugar
- 1 tbsp. water
- 4 tbsp. sherry vinegar
- Olive oil, salt and freshly ground pepper
Preparation
Preparation: 10 min. Cooking time: 15 min.
1. In a wok, cook the duck fillets for about 5 minutes on each side, starting with the skin side. Season with salt and pepper. Remove from the pan and keep warm. Deglaze the pan with the water and 2 tbsp. sherry vinegar to make a sauce.
2. Wash the endives and cut them into slices. In another pan, cook them over a high heat in a little olive oil. Add salt and pepper and a little sugar.
3. Cut up the duck fillets, arrange them on the plates and drizzle with the sauce. Keep warm. When the endives are golden brown, deglaze them with the remaining sherry.
4. Serve with watercress.
