Ingredients
- 12 fillets of sole
- 4 oranges for juice + 10 cl of juice
- 2 to 3 table oranges
- 25 cl dry white wine
- 2 onions, chopped
- 2 tsp. mustard
- Chopped chervil
- Olive oil, salt and freshly ground pepper
Preparation
45 min. approx.
1. In a large saucepan, fry the chopped onions in olive oil without browning them.
2. Extract the juice from the 4 oranges and pour it, together with the white wine, over the onions. Season with salt and pepper and bring to the boil, covered. Remove the lid and simmer for 15 minutes on a very low heat.
3. Increase the heat and poach the sole fillets in this sauce, without letting it boil, for 2 to 3 minutes on each side.
4. Dissolve the mustard in a little sauce and add it to the sauce. Add the table oranges in pieces.
5. Place the sole fillets on hot plates. Season with salt and pepper and cover with sauce.
6. Sprinkle with chervil and serve with rice and baby carrots.
